Recipe: 8-10 large ripe fresh tomatoes, finely chopped/1 1/2 large white onion, diced/10 cloves fresh garlic, minced/1 cucumber, peeled and finely chopped/2 stalks of celery, diced/3/4 cup fresh cilantro chopped/5-6 fresh limes, squeezed/4 tbsp. raw apple cider vinegar/cayenne pepper to taste/cumin powder to taste/sea salt to taste. Chop and dice all ingredients and mix well in a large bowl. Let sit overnight to let ingredients marinate (let sit at least 2 hours before serving).
